مستخلص:لا شك أن التقدم العلمي والتكنولوجي قد ساهم في رفاهية الإنسان ، إذ وفرت له حياة أفضل، كما أحدث التوسع في المبادلات الاقتصادية بين الدول، هذا ما أدّى إلى البحث عن وسائل إضافية جديدة تضمن أمن الغذاء كمّا ونوعا أثناء نقله من مكان إلى أخر دون إتلافه، و دفع بالمنتجين إلى البحث والقيام بإنتاج أنواع عدة من المواد الحافظة والمضافة للغذاء قصد تلبية حاجيات السكان العالم، و للمضاف الغذائي جانب إيجابي إلاّ أنه لا يخلو من الآثار الجانبية السلبية على صحة المستهلك، هذا ما جعل المشرع يتدخل بوضعه النصوص القانونية تتعلق بمكونات المضافة للمادة الغذائية سواء من حيث إلزامية الوسم وبيان تركيبها، أو من حيث حظره لبعض المضافات التي تشكل خطرا على صحة وسلامة المستهلك, والإشكالية تتمثل: إلى أي مدى تساهم المضافات الغذائية التي تدخل في الصناعة الغذائية في تحقيق رغبات المشروعة للمستهلك؟

THERE is no doubt that scientific and technologic progress has contributed to human well-been by providing him with a better life, it has also led to the expansion of economic exchange between countries, all of which led to the search for new additional means to ensure the security of food in quantity and quality while transporting it from one place to another without destroying it, and this is what prompted producers to research and produce several additives and food preservatives in order to meet the needs of the population in the word , that food additives have a positive side , but they are not without negative side effects on the health of the consumer, and this is what made the legislator intervene by setting legal texts regarding the components of the food additive , both in terms of mandatory labeling and an indication of its composition or prohibition of some additives that pose danger on consumer health.to what extent do food additives that are used in the food industry contribute to achieving the legitimate desires of the consumer?.
