مستخلص:تحتل المضافات الغذائية مكانة مهمة في القطاع الصناعي بسبب دورها في تحسين المواصفات الحسية والغذائية للمنتجات وإطالة مدة صلاحيتها، لكنها عملة ذو وجهين لأنها أيضا مصدر قلق يتعلق باضطرابات الحساسية التي قد تسببها أو امراضا اكثر خطورة كمرض السرطان. ان مسالة الموازنة بين المخاطر الناتجة عن الاستخدام المتزايد لها والمزايا المتوقعة من هذا الاستخدام، أمر يستدعي تدخل السلطات الصحية والهيئات العامة الأخرى، لتقرير قائمة المضافات المسموح بها، المواد التي يسمح فيها استخدامها بل والكمية المسموح بها. فهل ساهم الاطار القانوني المنظم لها في حماية المستهلك ، وبالنظر الى ان الصناعات الغذائية متنوعة وتختلف المضافات المستخدمة فيها من غذاء الى أخر فقد اخترنا المشروبات الغازية كعينة لتقدير مدى احترام القواعد القانونية المنظمة لاستخدام المضافات من قبل المنتجين.

Food additives occupy an important position in the industrial sector due to their role in improving the sensory and nutritional specifications of products and prolonging their shelf life, but it is a two-sided coin because it is also a source of concern related to allergic disorders that may be caused by it or more serious diseases such as cancer. The issue of balancing the risks resulting from its increased use and the expected benefits from such use, is a matter that calls for the intervention of health authorities and other public bodies, to determine the list of permitted additives, the materials in which their use is permitted, and even the permissible quantity.. Has the legal framework regulating them contributed to protecting.
The consumer, and given that the food industries are diverse and the additives used in them differ from one food to another, we chose soft drinks as a sample to estimate the extent to which the legal rules regulating the use of additives by producers are respected
