لقد شهدت المفاهيم المرتبطة بتوفير الاحتياجات الغذائية تطورات عديدة خاصة بعد تحرير التجارة الدولية لمختلف المنتوجات الزراعية؛ وذلك بعد الانتقال من مفهوم الاكتفاء الذاتي إلى مفهوم استدامة الغذاء.
و لقد عمدت الحكومات المختلفة بما فيها الجزائر إلى البحث عن آليات و إجراءات تساهم في تحقيق استدامة الغذاء و الحد من التبعية إلى الاْسواق الغذائية. و تعد الصناعات الغذائية من أهم فروع الإنتاج الصناعي التحويلي على المستوى العالمي؛ و ذلك من خلال دوره المتزايد في إشباع الحاجيات الاستهلاكية المتنامية.

Abstract :
The concepts related to the provision of food needs have witnessed many developments, especially after the liberalization of international trade for various agricultural products; Especially after moving from the concept of self-sufficiency to the concept of food security.
Various governments, including Algeria, have sought to find mechanisms and procedures that contribute to achieving food security and reducing dependency on food markets. The food industry is one of the most important branches of industrial manufacturing production at the global level. And that through its increasing role in satisfying the growing consumer needs.
